American Whiskey was born in 1791 in the eastern states of Virginia, Maryland and Pennsylvania. Initially brewed as a rye-based liquor, the government saw the appeal of tax revenue and what is now referred to as the “Whiskey Rebellion” ensued. Shortly thereafter, Irish pioneers in the hilly states of Tennessee and Kentucky began brewing the first official ‘American whiskey’. In those states they could easily find the necessary raw materials such as fresh, lime-rich water and plenty of wood to construct the barrels for transportation and storage.

Some key types of American whiskey include:

Bourbon whiskey, made from mash that consists of at least 51% corn (maize); Rye whiskey, made from mash that consists of at least 51% rye; Rye malt whiskey, made from mash that consists of at least 51% malted rye; Malt whiskey, made from mash that consists of at least 51% malted barley; Wheat whiskey, made from mash that consists of at least 51% wheat; Corn whiskey, made from mash that consists of at least 80% corn.

Bourbon must be aged in new American oak barrels. Some bourbons are aged for years while others are aged for only a few months. Although technically Bourbon can be produced in any state in America, 95% originates from Kentucky.

Tennessee whiskey is, in essence, a bourbon that must be both produced and aged exclusively in the state of Tennessee as well as undergoing charcoal filtration.
