Description

This cask of Solist Oloroso Sherry Oak was chosen by the team at The Spirits Company to be bottled exclusively for Australia. 239 Bottles were produced only.

In ancient times, the land around I-Lan in Taiwan was called Kavalan, a mysterious land that was solely inhabited by the indigenous people of the Kavalan clan. The name was officially recognized by the Emperor of the Chin dynasty in the year of 1809 when the original city was also built under the same name.

Kavalan had always been kept primitive and protected from the outside world by the Syue-shan mountain range which is abundant in high quality natural water that comes from deep within the mountain range. The mists of Kavalan and the spirits of the past have been created for you in this exquisite whisky.

The process water is drawn from the springs in the Snow Mountain and Central Mountains imparting a smooth and creamy mouth feel to the whisky. Matured in Oloroso sherry casks in special editions, Kavalan Solist Sherry is bottled by hand at the distillery, without any colouring, chill-filtration, and thus a truly “single single malt whisky” as described by some! It is a naturally smooth and rich whisky with a complex character. Kavalan Solist Sherry was also awarded Best Rest of the World Single Malt Whisky 2011 at World Whisky Awards.

What began as Kavalan's biggest challenge has become its secret ingredient—Taiwan's subtropical heat. It's the reason that Lee was told it couldn't be done, and now it's the reason Kavalan is able to supercharge the whisky maturation process, accomplishing in four or six years what might take a Scottish producer 15 or 25 years. The very simple explanation is that heat increases the interaction of the spirit with the wood, leading to more rapid and intense extraction of desired flavour compounds.
