This 78 Degrees Muscat Finished Australian Whiskey is a whiskey that looks to break the traditional boundaries of what we know whiskey to be, creating something uniquely Australian in style & flavour. When seeking a fortified wine to further mature the whiskey, 78 Degrees sought to further showcase what Australian whiskey can be, focusing on what is an iconic Australian fortified wine.

ABOUT 78˚ MUSCAT FINISH WHISKEY

When searching for a fortified wine that truly represented 78°, we didn’t have to look far. Liqueur Muscat, or Muscat as it is called here in Australia is as local as they come. Originating from the Rutherglen area of northern VIC, Muscat is produced from a late harvest pick, which is partially fermented, before being stopped halfway through and fortified with grape spirit. This creates a higher residual sugar and a much sweeter style of wine.

The Muscat is then added to wooden casks, where it spends the next 5 – 20+ years. It is in the hot climate of northern Victoria where the magic happens. The wines bake in the hot sun, creating a rich and delicious fortified wine, with all of the characters of raisins and stewed fruit. Once decanted, these casks are rich in Muscat character, with all of the residual flavour of Australian Muscat wine.

Meanwhile, our 78° Australian Whiskey is quietly maturing back in SA in ex Red Wine casks. Once ready, we empty these casks, before allowing our Whiskey time to further mature in the Australian Muscat casks. Here, the rich, chocolatey character of our Whiskey is heightened with the rich and luscious character of raisins and stewed fruit, lending to a truly exceptional flavour, with a uniquely Australian character. 

ABOUT 78˚

78 Degrees wanted to create something different, something uniquely Australian. When they set out to create a whiskey, their drive was not to replicate but to innovate. Rather than study existing styles, they worked on developing something different, something that reflected Australia, both in its modern form and its tens of thousands of years of history.

It was through this desire to create a product with a uniquely Australian flavour, that they were driven to research and develop a whiskey that didn’t just replicate something that already existed, but carved out its own place in the market.

Tasting Notes

Aroma: Rich stewed fruit and raisins up front, give way to dark chocolate and apricot. A faint whiff of smoke on the nose, with rich notes of digestive biscuits.

Taste: Raisins and stewed prunes on the front palette give way to notes of cocoa pops. Dried apricot comes through late, with a tingling spice of black pepper.

Finish: The taste of dark fruit, along with some rich demerara sugar. A lingering note of clove and black pepper, along with a faint smokey note.
