Distillation

The Rochfort team have hand selected local South Australian Export Pilsner Malt which produces a rich honey coloured appearance and a highly sweet, yet smooth spirit.

Using traditional methods of production, they pay close attention to the temperature of the water whilst “mashing in”.

The key is to make sure the grain doesn’t overheat, whilst maintaining the optimal temperature for starch conversion to sugars. 

They ferment in open top French oak fermenters for a five-day period before distilling through the custom fabricated copper wash still.

A run through the custom designed copper spirit still on day seven finalises refinement of the new make spirit.

Winery Partner

Planting of the Yangarra Estate vineyards commenced in 1946.

In that year, Bernard Smart, who still lives on Yangarra with his wife, assisted his father plant the High Sands vineyard to unirrigated bush vine Grenache.

In the decades since, the vineyard has been revived and extended, the water-courses rejuvenated and planted to native vegetation, the state-of-the-art winery built and commissioned, and a cellar sales and tastings room opened.

With this evolution, the wines of Yangarra Estate have steadily gained respect and critical acclaim.

Barrel Selection - “Yangarra Vintage Port Cask”

Dating back to the early 1980s this French oak cask nurtured port for over 30 years until it was selected for the task of finishing a special vintage of shiraz.

This casks diversity is such an attraction, as the sweet fruit notes of the port against the savoury profiles of the shiraz are sure to present exciting flavours which are truly unique.

Tasting Notes

Profile

The nose is apricot pie, malt toffees, nuts and stewed fruit in the beginning.

The whisky slowly drifts towards orange blossom with a dark rich golden syrup laced with raisins and heavy barrel char.

The palate is delicate and soft, creamy fruits, spice and oak lead the charge with a savoury transition to aniseed and dark chocolate coffee bean.

A beautiful viscosity and huge length with a drying finish.
